Baked Tomato Feta Gnocchi with Turkey Meatballs
Serves: Four | Prep: 20 min | Cook: 30 min
Ingredients:
Turkey Meatballs:
1 lb ground turkey
1 egg
1/3 cup dried Italain Style Breadcrumbs
1/2 tsp salt
1/4 tsp pepper
1/4 tsp red pepper flake
Baked Tomato Feta Gnocchi:
1 block feta cheese
2 lbs cherry tomatoes
1 lb uncooked gnocchi
1 onion, finely chopped
5 garlic cloves, thinly sliced
1/4 cup, plus 1 Tbsp olive oil, divided
2 Tbsp white wine
2 Tbsp honey
6-8 fresh basil leaves
2-3 fresh oregano sprigs
1 tsp salt
1/2 tsp pepper
1/4 tsp red pepper flake
Directions:
Preheat oven 425F/190C.
In a bowl add ground turkey, egg, breadcrumbs, salt, pepper and red pepper flake. Mix well. Roll into balls. Set aside.
To a 13X9 oven proof casserole dish, place feta in the middle. Around the feta add tomatoes, gnocchi, onion, and garlic. Drizzle with 1/4 cup oil, wine, and honey. Add basil and oregano sprigs. Sprinkle with salt, pepper and red pepper flake. Gently stir and coat well. Add meatballs to the dish and brush each meatball with the remaining 1 Tablespoon oil. Bake, 30 minutes, until feta is lightly golden, the meatballs are cooked through, and the tomatoes have blistered. Gently stir, and mix everything together before serving.
