Banana Oat Pancakes

Serves: Two | Prep: 10 min | Cook: 10 min

Ingredients:

Banana Oat Pancakes:
2 ripe bananas
2 eggs
1/2 cup oats
1 tsp vanilla extract
1/8 tsp salt
Coconut oil

Directions:
In a blender blend bananas, eggs, oats, vanilla, and salt, until smooth. Let batter sit for 10 minutes.

Heat a non-stick skillet and grease lightly with coconut oil. Spoon batter on to the hot skillet and cook, 1-2 minutes. Flip and cook for another minute. Continue cooking until all the batter is used, adding more oil as needed.

Serve with yogurt, berries, toasted coconut, and maple syrup.
