Banana Zucchini Muffins with walnuts, Chocolate Chips, and Coconut

Serves: Makes Twelve | Prep: 15 min | Cook: 20 min

Ingredients:

Banana Zucchini Muffins with Walnuts, Chocolate Chips, and Coconut:
1 zucchini, shredded
2 ripe bananas, smashed
1/4 cup light brown sugar
1 egg
1/4 cup milk
2 Tbsp coconut oil, melted
1 tsp vanilla extract
1 1/2 cup all-purpose flour, plus 1 Tbsp
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup walnuts, chopped
1/2 cup milk chocolate chips
1/2 cup desiccated coconut

Directions:
Preheat oven 350F/180C. Line a muffin tin with muffin cases.

In a small bowl mix chocolate chips and walnuts with 1 Tbsp flour.

In another bowl mix the remaining 1 1/2 cups flour, baking powder, baking soda, and salt together.

To a large bowl add zucchini, banana, sugar, egg, milk, coconut oil, and vanilla. Mix well with a wooden spoon. Add the dry ingredients, mix to combine. Stir in walnuts, chocolate chips, and coconut. Spoon batter into muffin cases. Sprinkle each muffin top with extra chocolate chips and coconut. Bake, 20 to 22 minutes, until a toothpick near the center of the muffin comes out clean. Cool on a wire rack.
