Cola Beef & Broccoli Sheet Pan

cola beef and broccoli with sesame seeds and chili peppers

Serves: Four | Prep: 15 min, +6 hours | Cook: 10 min

Ingredients:

Cola Beef & Broccoli Sheet Pan:
1.5 lb sirloin steak, cut into strips
1 12oz can cola
5 garlic cloves, minced
1 Tbsp ginger, grated
½ cup soy sauce
2 Tbsp sesame oil
1 Tbsp light brown sugar
1 tsp Worcestershire sauce
½ tsp red pepper flake
½ tsp pepper
1 Tbsp cornstarch/cornflour
1 Tbsp water
1 head broccoli florets
4 scallions, cut lengthwise
1 red chili, sliced
Toasted sesame seeds

Directions:
In a bowl whisk cola, garlic, ginger, soy sauce, sesame oil, worcestershire, sugar, red pepper flake, and pepper together.

Place steak into a bowl, add 1 cup of the mixed marinade. Cover and place in the refrigerator for at least 6 hours, overnight works best. Place remaining marinade in the refrigerator for later use.

Preheat oven 425F/220C. Line a baking tray with baking paper.

In a bowl add broccoli and scallions, cover with some of the remaining marinade. Using a slotted spoon remove vegetables from the marinade, place on tray, reserve the marinade. Using the same method remove meat from marinade and place onto the tray, discard meat marinade. Bake 10-12 minutes.

Meanwhile, in a small bowl whisk cornstarch and water together to make a slurry.

Place remaining marinade along with the vegetable marinade into a saucepan and bring to the boil over medium high heat. Add the cornstarch mixture and whisk continuously for 30 seconds, until the sauce thickens. Pour over vegetables and steak. Garnish with more scallions, sliced chilies and toasted sesame seeds.
