Creamy Mushroom Soup

Serves: Four | Prep: 5 min | Cook: 15 min

Ingredients:

Creamy Mushroom Soup:
2 Tbsp butter
1 onion, chopped
4oz chestnut/brown mushrooms, sliced
2 garlic cloves, minced
1 cup fresh parsley, chopped
2 cups beef stock
3/4 cup sour cream

Garnish:
Fried mushroom slices
Fresh parsley, chopped
Truffle oil, drizzled (optional)

Directions:
In a pot over medium heat, melt butter. Add onions, cook for 3-5 minutes, until soft. Add mushrooms and cook for another 3-5 minutes. Add garlic and cook for 30 seconds more. Add stock and parsley, lower heat to a gentle simmer and cook, 12-15 minutes. Remove from the heat and with an immersion blender, blend until smooth. Stir in the sour cream, season to taste and garnish.
