Italian Sausage and Peppers

Serves: Six | Prep: 20 min | Cook: 25 min

Ingredients:

Sausage and Peppers:
1 lb sweet Italian sausage links
1 lb hot Italian sausage links
2 Tbsp olive oil
1 red bell pepper, seeded and sliced
1 yellow bell pepper, seeded and sliced
1 orange bell pepper, seeded and sliced
2 onions, sliced
4 garlic cloves, minced
3 Tbsp balsamic vinegar
1 14.5 oz can chopped tomatoes
2 Tbsp fresh basil, chopped
1 tsp salt
1/2 tsp pepper

Directions:
Preheat oven 400F/200C. Line a baking tray with baking paper. Place sausage links onto the prepared tray. Bake, 25-30 minutes, turning halfway through cooking. Let cool slightly before cutting into bite size pieces.

Heat oil in a large skillet over medium high heat. Add bell peppers, cook, 5 minutes, stirring occasionally. Add onions and cook for another 5-7 minutes, stirring occasionally, until slightly caramelized. Add garlic, cook 1 minute more. Carefully add the balsamic vinegar, stirring constantly for 1 minute. Add tomatoes, basil, salt, pepper and the sliced sausages back to the skillet. Let simmer, 10 minutes. Garnish with more fresh basil.
