Prawn and Smoked Salmon Ricotta on Chicory

Ingredients:
Prawn and Smoked Salmon Ricotta on Chicory:
1 lb cooked prawns
1/2 lb smoked salmon, chopped
1 cup ricotta cheese
1 tsp lemon zest
2 Tbsp extra virgin olive oil
1 Tbsp freshly squeezed lemon juice
1 Tbsp fresh dill, chopped
1 Tbsp fresh chives, chopped
1/4 tsp salt
1/4 tsp Pepper
1 head chicory, leaves separated
Directions:
Arrange chicory leaves on a platter.
Pat prawns dry with a paper towel.
In a bowl whip up ricotta and lemon zest. Fold in prawns and smoked salmon. Place a spoonful of the prawn mixture into the prepared chicory leaves.
In a bowl whisk oil, lemon juice, dill, chives, salt, and pepper together. Drizzle over the filled chicory leaves.
