Sausage, Apple, and Butter Bean Bake

Ingredients:
Sausage, Apple, and Butter Bean Bake:
2 Tbsp olive oil
1.5 lbs sausage links
1 large onions, thinly sliced
6 garlic cloves, thinly sliced
1/2 tsp salt
1/2 tsp pepper
2 apples, cored and 1/2-inch wedges
1 Tbsp light brown sugar
2 tsp fresh thyme, minced
1 cup chicken stock
1 14oz can butter beans, drained and rinsed
1 Tbsp apple cider vinegar
1 tsp wholegrain mustard
1-2 Tbsp fresh parsley, chopped
Directions:
Preheat oven 400F/200C.
Heat 1 Tbsp oil in ovenproof skillet over medium high heat. Add sausages. Cook, turning occasionally for 6 minutes until brown. Remove from skillet and set aside. Add remaining Tablespoon of oil add onion, garlic, salt, and pepper. Cook for 1-2 minutes. Add apples, brown sugar, and thyme. Stir and cook, 3 minutes until slightly soft. Add stock, drained butter beans, vinegar, and mustard. Bring to the boil, cook in the oven, uncovered 15-20 minutes, until sausage are cooked through. Stir in parsley before serving.
