Soda Bread

Serves: One Loaf | Prep: 10 min | Cook: 50 min

Ingredients:

Soda Bread:
1 3/4 cup buttermilk
1 egg
3 1/2 cups all-purpose flour, plus 1 Tbsp
3 Tbsp sugar
1 tsp baking soda
1 tsp baking powder
1 tsp salt
4 Tbsp cold butter, cubed
1 cup raisins
2 tsp caraway seeds

Directions:
Preheat oven 350F/180C. Grease a dutch oven or a cast iron skillet.

In a small bowl mix together the 1 Tbsp flour with the raisins.

In a jug, whisk egg and buttermilk.

In a large bowl combine flour, sugar, baking soda, powder and salt.  Add the cold butter and rub with your fingertips, until the mixture comes together.  Add the buttermilk mixture and gently stir with a wooden spoon, until all incorporated. Stir in raisins and caraway seeds. Pour dough onto a well-floured surface, with floured hands work dough into a large circle, kneading for about 30 seconds. Place dough into the greased pan. Bake, 50-60 minutes.
