Ultimate Chocolate Brownies

Serves: Eight | Prep: 20 min | Cook: 30 min

Ingredients:

Ultimate Chocolate Brownies:
4 oz dark chocolate, roughly chopped
4 oz butter
1/2 cup dark brown sugar
1/2 cup sugar
2 Tbsp maple syrup
3 eggs
2 tsp vanilla extract
1/2 cup plus 1 Tbsp all-purpose flour
1/4 cup cocoa powder
1/2 tsp baking powder
1/2 cup milk chocolate chips
1/2 cup walnuts, roughly chopped
2 Tbsp coarse brown sugar

Directions:
Preheat oven 350F/180C. Grease an 8X8 or 12X5 inch baking pan with butter and line the bottom with baking paper, grease with butter.

In a saucepan over medium low heat add dark chocolate, butter, sugars and maple syrup. Heat gently, stirring until the mixture is well blended and smooth. Remove from the heat and let cool slightly.

In a bowl add chocolate chips, walnuts and 1 Tbsp of flour, mix well.

Sieve ½ cup of flour, cocoa powder and baking powder into a bowl.

Beat eggs and vanilla together, add to the cooled chocolate mixture, mix until smooth. With a rubber spatula fold in the flour mixture, then carefully fold in the chips and walnuts. Spoon mixture into the prepared tin and spread out evenly. Sprinkle the coarse sugar evenly on top. Bake, 20-25 minutes, until the top is crisp, and the sides pull away from the tin. A toothpick inserted into the center will have dough on it when pulled out, do not overcook the brownies. Leave the brownies in the tin to cool completely before cutting into squares and serving.

Serve with Raspberry Coulis.
