Bacon Wrapped Goat Cheese Stuffed Dates with a Bourbon Glaze & Date Cocktail

Serves: Six | Prep: 10 min | Cook: 25 min

Ingredients:

Bacon Wrapped Goat Cheese Stuffed Dates:
16 dates
4 oz soft goat cheese, room temperature
8 slices bacon, cut in half

Bourbon Glaze:
1/4 cup maple syrup
1 Tbsp bourbon
1 Tbsp fresh rosemary, minced

Date Cocktail:
1 Tbsp date syrup
1 oz pomegranate juice
1 oz freshly squeezed orange juice
3-4 oz prosecco, chilled

Garnish:
Pomegranate seeds
Rosemary sprig
Edible gold glitter

Directions:

Stuffed Dates:
Preheat oven 400F/200C. Line a baking tray with baking paper.

Split dates in half, lengthwise, making sure not to cut all the way through. Remove pit and discard.

Stuff each date with goat cheese, gently squeeze the date together and wrap with bacon, place the seam side down on to the prepared tray.

To make the bourbon glaze, in a bowl add maple syrup, bourbon and rosemary.  Whisk together. Brush each date with half the mixture. Cook, 20-25 minutes, until the bacon is crispy.  Remove fromthe oven and brush the remaining glaze over the dates.  Serve warm or at room temperature. Goes great with candied pecans and pomegranate seeds.

Date Cocktail:
On a flat plate add the date syrup, carefully rim each champagne glass. Add pomegranate and orange juice to each prepared glass.  Top with prosecco and garnish.
