Funfetti Cookies & Birthday Martini

Ingredients:
Funfetti Cookies:
1 ½ cups all-purpose flour
1 Tbsp cornstarch/ cornflour
½ tsp baking soda
½ tsp salt
½ cup butter, room temperature
½ cup sugar
1 egg
1 tsp vanilla extract
½ cup sprinkles
Funfetti Cookie Frosting:
2 oz butter, room temperature
2 cups powdered/icing sugar
1 tsp vanilla extract
2 Tbsp water
Birthday Martini:
1 Tbsp Frosting
2 oz Vanilla vodka
2 oz heavy/double cream
1 oz white cream de cocoa
½ oz Amaretto
Sprinkles
Garnish:
Whipped cream
Sprinkles
Maraschino cherry
Directions:
Funfetti Cookies:
In a bowl add flour, cornstarch, baking soda and salt.
Stir and set aside.
In a mixer with a paddle attachment cream butter and sugar together. Add the egg and vanilla, mix on medium speed, scrapping down the bowl as needed. Turn the mixer to low speed add the dry ingredients, mix just until combined. Add the sprinkles and mix to combine. Place dough into the refrigerator for at least 30 minutes.
Preheat oven 350F/180C. Line two baking trays with baking paper.
Roll 1 tablespoon of batter into a ball and place 1 inch apart onto the prepared tray. Bake 10-12 minutes, until browned. Let cool on the baking tray for 5 minutes before transferring to a wire rack to let cool completely.
Funfetti Cookie Frosting:
In a mixer with a paddle attachment, add butter and sugar to the bowl, start with the mixer on low speed until blended. Increase the speed to medium high, add the vanilla and mix 5-7 minutes, until the smooth.
Birthday Martini:
Place the honey and sprinkle on 2 separate small plates. Dip the martini rim into the honey then sprinkles, coat the rim.
In a cocktail shaker filled with ice add vodka, cream, white crème de cocoa and amaretto. Shake vigorously. Pour into the prepared glass and garnish.
