Lemon Cheese Danish & Citron Prosecco

Ingredients:

Lemon Chesse Danish:
8 oz cream cheese, room temperature
3 Tbsp sugar, plus more
1/4 tsp vanilla extract
2 tsp lemon zest
1/2 lemon, juiced
1 sheet puff pastry, thawed
1 egg

Citron Prosecco:
1 Tbsp yellow colored sugar
2 oz Citron vodka
1 oz freshly squeezed lemon juice
1 oz simple syrup
3 oz chilled prosecco

Garnish:
Candied Lemon Slices
Lemon slice

Directions:

Lemon Cheese Danish:
Preheat oven 400F/200C. Line 2 baking trays with baking paper.

In a mixer with a paddle attachment cream the cream cheese and sugar together on low speed, until smooth. Add vanilla, lemon zest and juice, mix just until combined.

Unfold the puff pastry onto a lightly floured work surface, with a floured rolling pin roll out a 16X8 inch rectangle. Cut pastry in half lengthwise, then into quarters crosswise, creating eight squares.

Make the egg wash by beating the egg with 1 Tbsp water, brush the edges of the squares with the egg wash.

Fold each corner in about 1 inch towards the center and gently press to adhere. Place each square 2 inches apart on the prepared baking tray. Dollop a heaping Tablespoon of filling into the middle of each square. Brush the remaining pastry with the egg wash. Sprinkle sugar on top and bake, 18-20 minutes, until puffed and golden brown.

Citron Prosecco:
Place yellow colored sugar on a flat plate. Rub the rim of the glass with a lemon wedge, dip the rim into the sugar.

In a shaker add vodka, lemon juice and simple syrup. Shake vigorously, pour into the prepared glass, top with chilled prosecco and garnish.
