Peanut Butter Dough Balls & Peanut Butter Whiskey Cocktail
Serves: Makes 12 balls | Prep: 50 min | Cook: 5 min
Ingredients:
Peanut Butter Dough Balls:
1/4 cup salted peanuts
1/4 cup oats
1/2 cup dates, about 8-10, pitted
1/4 cup chunky peanut butter
1 Tbsp maple syrup
1 tsp vanilla extract
4 oz milk choclate, roughly chopped
1/2 Tbsp coconut oil
1 tsp flaked sea salt
Peanut Butter Whiskey Cocktail:
1 Tbsp chocolate syrup
1/4 tsp flaked sea salt
2 oz peanut butter whiskey
1 oz creme de cacao
4 oz full fat milk
Garnish:
Chocolate shavings
Directions:
Peanut Butter Dough Balls:
Line a baking tray with baking paper.
In a food processor add peanuts and oats, process until finely chopped. Add pitted dates, peanut butter, maple syrup and vanilla. Process again until, finely chopped. Scoop one Tablespoon of mixture into your palm and gently press into a ball, place onto the prepared tray. Place in the refrigerator for at least 30 minutes.
In a double boiler melt chocolate and coconut oil together over medium heat, until smooth. Remove from heat. Add one ball at a time, coating well with the melted chocolate. Use 2 forks to remove the ball, dripping off any excess chocolate. Place back onto the prepared tray, sprinkle with sea salt and let sit until hard.
Peanut Butter Whiskey Cocktail:
Pour chocolate syrup onto the rim of the glass and along the inside. Sprinkle the rim with the sea salt. Add ice to the prepared glass.
In a cocktail shaker filled with ice add whiskey, crème de cacao and milk. Shake vigorously and pour into the prepared glass and garnish.
