Pear and Ginger Chutney & Pear Mule

Serves: Eight | Prep: 5 min | Cook: 35 min

Ingredients:

Chutney:
1 Tbsp butter
1 onion, finely chopped
3 cups pears, peeled, cored and finely chopped
1 Tbsp fresh ginger grated
1/4 cup dry white wine
1/2 cup white wine vinegar
1/3 cup light brown sugar
1 Tbsp freshly squeezed lime juice

Pear Mule:
1/2 ripe pear, peeled, cored and roughly chopped
2 oz vodka
1 oz freshly squeezed lime juice
1 can ginger beer, chilled

Garnish:
Crystallized ginger
Lime slice

Directions:

Chutney:
Melt butter in a saucepan over medium heat. Add onion, cook 3-5 minutes, until soft. Add pears and ginger, cook 3-4 minutes. Add wine, cook 2 minutes more. Add vinegar, sugar and lime juice. Bring to the boil. Reduce heat and simmer uncovered, 25-30 minutes, stirring occasionally, until the pears are soft, and chutney thickens. Let cool completely before serving, the chutney will thicken while cooling.

Pear Mule:
In a copper mug, muddle pear, vodka and lime together. Add ice, top with ginger beer. Stir and garnish.
