Prosciutto Wrapped Green Beans with Garlic Balsamic Glaze & Side Car

Ingredients:
Prosciutto Wrapped Green Beans:
1 lb green beans, trimmed
1 Tbsp salt
3 oz prosciutto, cut in half
2 Tbsp olive oil
1 tsp pepper
Garlic Balsamic Glaze:
2 Tbsp butter
8 garlic cloves, minced
2 Tbsp balsamic vinegar
4 tsp brown sugar
2 Tbsp water
Side Car:
1 Tbsp sugar
2 oz cognac
1 oz triple sec
1 oz freshly squeezed lemon juice
Garnish:
Lemon peel
Orange peel
Directions:
Prosciutto Wrapped Green Beans:
To a large pot of boiling water add 1 Tablesppon salt andthe green beans. Blanch beans by cooking, 3-4 minutes, drain and place into an ice bath, drain again.
Preheat broiler/grill. Line a baking tray with baking paper.
Using the cut pieces of prosciutto wrap about 5-6 green beans. Place the wrapped bundles onto the prepared tray. Drizzle with olive oil and pepper. Broil/grill, 2-3 minutes, each side, until the prosciutto gets crispy.
Garlic Balsamic Glaze:
In a skillet over medium heat, melt butter. Sauté garlic, 1-2 minutes, just until turning brown. Mix the balsamic and brown sugar together, add to the garlic, cook 15-20 seconds, until reduced by half. Add water, cook 15-20 seconds more, until thick and syrupy.
Once beans are cooked, place on a serving tray and top with the garlic balsamic glaze.
Side Car:
Place sugar onto a flat plate. Rub the rim of the glass with a lemon wedge, dip the rim into the sugar.
In a cocktail shaker filled with ice add cognac, triple sec and lemon juice. Shake vigorously. Pour into the prepared glass and garnish.
