Thyme Cheddar Crackers & Thyme Lemonade Cocktail

Ingredients:
Thyme Cheddar Crackers:
1/2 cup butter, room temperature
3 cups sharp cheddar cheese, shredded
1 egg
1 tsp dijon mustard
1 tsp fresh thyme
1/2 tsp salt
1 1/4 cup all-purpose flour
coarse salt
Thyme Lemonade Cocktail:
2 oz vodka
4 oz Freshly Squeezed Lemonade
Garnish:
Lemon slices
Fresh Thyme
Directions:
Thyme Cheddar Crackers:
In a food processor, pulse together butter, cheese, egg, mustard, salt, and thyme. Add flour and pulse, until combined. Transfer dough onto a lightly floured work surface, form dough, cut dough in half and roll into 2 logs, 1 1/2-inch width by 6-inch length. Wrap both logs in plastic wrap, refrigerate until firm. At least 4 hours.
Preheat oven 350F/180C. Line a baking tray with baking paper.
Slice dough into 1/4-1/2-inch rounds. Place onto prepared tray, 1-inch apart. Bake, 15-20 minutes, until edges are golden. Remove from oven. Sprinkle with coarse salt, let cool on a wire rack before serving.
** Dough can be frozen for 2 months.
Thyme Lemonade Cocktail:
Add vodka and Freshly Squeezed Lemonade to a glass filled with ice. Stir and garnish.
