Carrot Citrus Crush Pitcher

Ingredients:
Carrot Citrus Crush Pitcher:
1 1/2 - 2 lbs carrots, cleaned and trimmed (2 cups carrot juice)
2 cups vodka
1 cup freshly squeezed orange juice
1/2 cup Orange Liqueur
1/4 cup freshly squeezed lime juice
Garnish:
Orange slice
Sprig of curly parsley
Directions:
Chop the carrots into 1–2 inch pieces. Add the chopped carrots to a food processor. Pulse and slowly pour in about 1/2 cup of cold water to help it blend. Continue processing until it forms a thick purée. Scrape the sides down as needed.
Set a fine mesh strainer over a bowl or large measuring cup. Pour the carrot purée in and press or squeeze to extract the juice. You should have close to 2 cups of juice.
Place strained juice into a large pitcher along with vodka, orange juice, orange liqueur, and lime juice. Mix well.
In a cocktail shaker filled with ice add the cocktail mixture. Shake vigorously and strain into glasses filled with ice and garnish.
