Candied Lemon Slices

How to make Candy Lemon Slices:

Ingredients:
1 cup sugar
1 cup water
2 Tbsp freshly squeezed lemon juice
2-3 lemons, sliced 1/8-inch thick

Directions:
In a large saucepan add sugar, water and lemon juice, stir. Bring to the boil, reduce heat, add lemon slices. Simmer, 15 minutes, stirring once or twice during the cooking process. Transfer lemon slices to a wire cooling rack, let cool.

Store in the refrigerator for up to 2 weeks and use the syrup as a simple syrup in the Citron Prosecco Cocktail.
