Chive Blossom Vinegar

Serves: Makes 1 cup | Prep: 5 min | Cook: 0 min

Ingredients:

Chive Blossom Vinegar:
15-20 chive blossoms
1 cup white wine vinegar

Directions:
Cut the blossoms off the chive stems, just below the flower head. Rinse gently and let dry.

Pack the blossoms loosely in a glass jar with a glass lid, leaving room at the top. Cover them with white wine vinegar. Set in a cool dark place for two weeks.

After two weeks, strain into another glass jar with a glass lid.

If not using a glass lid, use a piece of baking paper as a as a lid, do not use a metal lid.
