Apple Dutch Baby Pancake
Serves: Four | Prep: 25 min | Cook: 15 min
Ingredients:
Dutch Baby Pancake:
1/2 cup all-purpose flour
1/2 cup full fat/whole milk
2 eggs
1 Tbsp maple syrup
2 tsp vanilla extract
1/2 tsp salt
3 Tbsp butter
Apple:
1 lb apples, peeled, cored, and thinly sliced
1 Tbsp butter
2 Tbsp light brown sugar
1 tsp Apple Pie Spice
Directions:
In a blender add flour, milk, eggs, maple syrup, vanilla extract, and salt. Blend, 30-60 seconds, until smooth. Let the batter rest for 20 minutes.
Place a 10-inch cast iron skillet into the oven. Turn oven on and preheat 425F/218C.
Once preheated, remove skillet add butter and swirl, until the butter melts. Coat bottom and sides of the skillet. Add batter, and swirl, until even. Bake, 15-20 minutes, until puffed, lightly brown across the top and darker brown around the edges.
Meanwhile, while baking make the apples by melting butter and sugar together in a skillet over medium heat. Add apples and apple pie spice. Cook, 6-8 minutes, stirring occasionally, until slightly soft. Place cooked apples on top of the pancake drizzle with maple syrup and powdered sugar. Serve warm.
