Apple Stuffed Pork Loin

Ingredients:
Apple Stuffed Pork Loin:
2 lbs pork loin
2 Tbsp butter
1 onion, finely chopped
2 garlic cloves, minced
1 tsp fresh sage, minced
1 tsp fresh rosemary, minced
1/2 tsp salt
1/4 tsp pepper
1/2 cup cider
1 cup apples, finely chopped
2 Tbsp dried apricots, finely chopped
2 Tbsp raisins
2 Tbsp walnuts, finely chopped
1 cup plain breadcrumbs, about 4 slices of bread
6 slices bacon
1 Tbsp maple syrup
Directions:
Preheat oven 350F/180C.
Place pork loin fat side down on a large cutting board. Using a sharp knife cut down along the thinner side of the loin, lengthwise, stopping about ½ inch from the end. Turn the meat around and cut the pork again, the same as the other side, until the pork is about ½ inch thick, and it can lay flat. Season both sides with salt and pepper.
Make the stuffing by melting butter in a skillet over medium heat. Add onions, cook, 3-5 minutes, until soft. Add garlic, sage, rosemary, salt, and pepper. Add cider, apples, apricots, raisins and walnuts. Bring to the boil. Cook, 3 minutes. Remove from heat, stir in breadcrumbs and parsley.
Spread the filling over the surface of the pork, leaving an inch boarder all around the sides. Roll the pork, starting with the side that was cut first. Place bacon on top and brush with maple syrup. Tie with kitchen twine, about every 1 ½ to 2 inches. Transfer to a roasting tin. Roast, 50-60 minutes, until the internal temperature reaches 145F/63C. Let rest, 10-15 minutes before slicing. Remove twine before serving.
