Black Cherry Ice Cream
Serves: Twelve | Prep: 10 min, plus 6 hrs | Cook: 8 min
Ingredients:
Black Cherry Jam:
1 lb cherries, pitted
3 Tbsp honey
1 Tbsp freshly squeezed lemon juice
Ice Cream:
2 cups double/heavy cream
1 can sweetened condensed milk
Directions:
In a saucepan over high heat add cherries, honey, and lemon juice. Bring to the boil. Once cherries are soft use a fork to break and mash cherries. Continue to cook, 5-8 minutes, until the jam reduces and thickens. Remove from the heat and let cool completely.
To make the ice cream add cream to a bowl, whip until soft peaks. Stir in condensed milk and the cooled black cherry jam. Cover with baking paper, letting it touch the surface of the cream. Chill in the freezer for at least six hours, overnight works best. Remove from the freezer 10 minutes before serving.
