Bourbon Chocolate Chip Banana Bread with Bourbon Glaze

Serves: 1 loaf | Prep: 10 min | Cook: 50 min

Ingredients:

Bourbon Chocolate Chip Banana Bread:
1 3/4 cup, plus 1 Tbsp all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup butter, room temperature
1/2 cup light brown sugar
2 eggs
1 cup ripe bananas, about 3 bananas
3 Tbsp bourbon
1 tsp vanilla extract
1 cup chocolate chips

Bourbon Glaze:
1/2 cup powdered/icing sugar
1 Tbsp bourbon
1/2 tsp vanilla extract
1-2 tsp water

Directions:
Preheat oven 350F/180C. Line or grease a loaf tin.

In a small bowl mash bananas with a fork.

Combine flour, baking powder, soda, and salt together in a bowl.

In a third bowl mix 1 Tbsp flour with the chocolate chips.

In a large bowl cream butter and brown sugar together. Add eggs, bananas, vanilla, and bourbon, mix, until combined. Add the dry ingredients, mix, just until combined. Stir in the floured chocolate chips. Pour batter into the prepared loaf tin. Bake, 50-60 minutes, until a toothpick near the center of the bread comes out clean. Cool on a wire rack.

While cooling, make the bourbon glaze by whisking powdered sugar, bourbon, and vanilla in a bowl. Adding 1 tsp of water at a time to get the desired consistency.
