Bran and Date Muffins

Serves: Makes Twelve | Prep: 15 min | Cook: 15 min

Ingredients:

Bran and Date Muffins:
2 1/2 cups wheat bran
1/2 cups all-purpose flour
1 1/2 tsp baking soda
1/2 tsp salt
1 1/2 cup buttermilk
2 eggs
1/3 cup light brown sugar
1/4 cup molasses
3 Tbsp butter, melted
1/2 cup dates, chopped

Directions:
Preheat oven 350F/180C. Line a muffin tin with muffin cases.

In a bowl mix wheat bran, flour, soda, and salt.

In another bowl whisk buttermilk, eggs, molasses, and butter together. Stir in the bran mixture, until completely incorporated. Stir in chopped dates. Spoon batter into muffin cases, filling up the cases. Bake, 15-18 minutes, until a toothpick near the center of the muffin comes out clean. Cool on a wire rack.
