Broccoli Cheddar Mini Pizza Turnovers

Serves: Makes Twelve | Prep: 15 min | Cook: 20 min

Ingredients:

Broccoli Cheddar Mini Pizza Turnovers:
1 Pizza Dough
1 Tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 cup broccoli florets, finely chopped
1/2 cup cheddar cheese, shredded
1/4 cup ricotta cheese
1/4 cup parmesan cheese, grated
1 egg

Directions:
Preheat oven 375F/190C. Line a baking tray with baking paper.

Heat oil in a skillet over medium heat. Add onions, cook, 3-4 minutes, until soft. Add garlic and broccoli florets. Cook, 2-3 minutes, until the broccoli becomes slightly tender but still crisp.  Remove from heat, stir in cheddar, ricotta, and parmesan cheese. Let cool slightly.

Roll out pizza dough and cut into 4-inch circles. Place 1 Tablespoon of mixture in the middle of each circle. Fold dough over to make a semi-circle and press the edges together with a fork, to seal edges. Brush the semi-circles with egg wash, whisking th egg with 1 Tablespoon of water.  Bake, 15-20 minutes, until crispy and golden.

Serve with warm Marinara Sauce
