Vanilla Custard

Serves: Six | Prep: 5 min | Cook: 20 min

Ingredients:

Custard:
3 eggs
2 cups milk
2 Tbsp sugar
1 tsp vanilla extract

Directions:
In a saucepan whisk eggs, milk, and sugar together. Cook, stirring continuously over low heat with a wooden spoon. The custard is done when you can trace a line across the back of the spoon, and the line remains visible, about 20-25 minutes. Take off the heat, stir in vanilla extract. Strain through a fine mesh strainer into a clean bowl, cover with plastic wrap, making sure the plastic wrap is touching the surface of the custard while it cools in the refrigerator.
