Cajun Shrimp Rice Skillet

Ingredients:
Cajun Shrimp Rice Skillet:
1 lb raw shrimp, peeled and deveined
2 tsp paprika
1 tsp garlic powder
1 tsp dried oregano
1 tsp salt
1/2 tsp pepper
1/2 tsp onion powder
1/4 tsp cayenne pepper
1/4 tsp red pepper flake
4 Tbsp butter, divided
2 shallots, finely chopped
1 cup long grain rice
2 garlic cloves, minced
2 cups chicken stock
1/2 red bell pepper, chopped
1/2 cup frozen peas
2 Tbsp fresh parsley, chopped
Directions:
In a bowl mix paprika, garlic powder, oregano, salt, pepper, onion powder, cayenne pepper and red pepper flake together.
Melt 2 Tbsp butter in a skillet with a lid over medium heat. Add shallots, cook, 2-3 minutes, stirring occasionally, until soft. Add rice, stir and cook, 2-3 minutes. Add garlic and 1 Tbsp of the spice mixture, cook for 30 seconds. Add stock, stir, bring to the boil, cover, lower heat to low and simmer for 20 minutes.
Place cleaned shrimp into a bowl stir the remaining spice mix and 2 Tbsp melted butter, until the shrimp are coated well.
Remove lid. Turn up heat add shrimp, bell peppers and peas. Cook, 3-5 minutes, stirring often, until the shrimp are cooked, no longer pink. Garnish with fresh parsley.
