Buttermilk Pancakes

Serves: Four | Prep: 15 min | Cook: 5 min

Ingredients:

Buttermilk Pancakes:
1 cup buttermilk
2 eggs
1 tsp vanilla extract
1 cup all-purpose flour
1 tsp sugar
1 tsp baking soda
1 tsp baking powder
butter

Directions:
In a bowl whisk buttermilk, eggs and vanilla together.

In another bowl add flour, sugar, baking soda and powder together. 

Whisk the wet ingredients into the dry, let sit for 10 minutes.

Heat a skillet over medium heat and add enough butter to coat the pan. Spoon 1/4 cup batter into the hot pan. Cook, 1-2 minutes, until bubbles appear. Flip and cook for another 1-2 minutes on the other side. Continue to cook the remaining batter, adding more butter to the pan as needed. Serve with maple syrup and fresh berries.
