Coconut French Toast with Coconut Maple Syrup

Serves: Six | Prep: 5 min | Cook: 25 min

Ingredients:

Coconut French Toast:
8-10 slices rustic bread
3 eggs
1 cup coconut milk
2 tsp vanilla extract
1 tsp sugar
butter for greasing
2 bananas, sliced
1/2 cup toasted coconut

Coconut Maple Syrup:
1/2 cup coconut milk
1 tsp cornstarch/corn flour
1/4 cup maple syrup
2 tsp vanilla extract
1/4 tsp cinnamon

Directions:
Preheat oven 200F/94C.

In a bowl whisk eggs, coconut milk, vanilla, and sugar together.

Heat a skillet over medium heat and add enough butter (about 1 Tablespoon) to coat the pan.

Dip both sides of the bread into the egg mixture, one at a time. Place dipped bread into the hot skillet. Cook, 3-6 minutes per side, until golden brown. Continue with the following slices until all are cooked, adding more butter to the skillet as needed. Keep warm by placing toast in preheated oven.

Make the coconut maple syrup by whisking coconut milk and cornstarch together in a saucepan over medium high heat. Bring to the boil, let boil for 1 minute, whisking continuously. Take off the heat. Whisk in syrup, vanilla, and cinnamon. Serve over toast along with sliced bananas and toasted coconut.
