Corned Beef Hash

Serves: Four | Prep: 10 min | Cook: 20 min

Ingredients:

Corned Beef Hash:
1 lb potatoes, peeled, small cubed
1 onion, finely chopped
1/2 lb cooked corned beef, finely chopped
3 Tbsp vegetable oil
1/2 tsp pepper
1/4 tsp salt
1 Tbsp fresh parsley, chopped

Directions:
Add potatoes to a pot, fill with water, add salt. Bring to the boil. Par boil, 6-7 minutes, until fork tender. Drain.

Heat oil in a cast iron skillet over medium heat. Add onions, cook, 2-3 minutes, until soft. Add cooked potatoes and corned beef. Push down in the skillet. Cook, 5-7 minutes. Turn over the hash carefully, trying not to break up the potatoes. Push down again. Cook, 5-7 minutes more, until crispy. Stir in salt, pepper, and fresh parsley before serving. Delicious with your favorite eggs.
