Creamy Sherry Sauce with Lobster Raviolis

Serves: Four | Prep: 10 min | Cook: 10 min

Ingredients:

Creamy Sherry Sauce with Lobster Raviolis:
1 lb pre-made lobster raviolis
1 Tbsp olive oil
2 shallots, thinly sliced
3 garlic cloves, minced
2 Tbsp tomato paste
1/2 tsp red pepper flake
1/2 tsp salt
1/4 tsp pepper
2 Tbsp medium sweet sherry
1/2 cup heavy/double cream
1/4 cup parmesan cheese, grated

Directions:
Cook raviolis according to package, saving ½ cup pasta water.

Heat oil in a skillet over medium heat. Add shallots, cook, 3-4 minutes. Add garlic, cook 30 seconds. Add tomato paste, red pepper flake, salt, and pepper. Stir. Cook, 1-2 minutes. Add sherry, cook, 1 minute more. Stir in pasta water, cream, parmesan, and cooked raviolis. Cook, 2 minutes more. Top with extra parmesan cheese and red pepper flake.
