Tomato Mozzarella Topped Chicken

Ingredients:
Chicken Marinade:
4 chicken breasts, skinless and boneless
3 garlic cloves, minced
2 Tbsp olive oil
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp pepper
Tomato Mozzarella Topping:
1 lb ripe tomatoes, chopped
1/2 cup fresh mozzarella, chopped
2 garlic cloves, minced
1/4 cup fresh basil chopped
2 Tbsp extra virgin olive oil
1 Tbsp balsamic vinegar
1 tsp salt
1/4 tsp pepper
Directions:
In a large dish whisk the chicken marinate together. Garlic, olive oil, oregano, thyme, salt, and pepper. Add chicken and let marinate for 10 minutes.
Make the tomato mozzarella topping. In a bowl whisk garlic, balsamic vinegar, olive oil, salt, and pepper together. Stir in tomatoes, mozzarella, and basil. Let sit, 5-10 minutes.
Preheat barbecue, medium high heat. Grill chicken, 6-8 minutes per side, until the internal temperature is 165F/74C. Remove from heat and let rest, 5 minutes before serving. To serve top each piece of chicken with a hefty spoonful of the tomato mozzarella topping.
