Garlic Lemon Broccoli Stems

Serves: Four | Prep: 10 min | Cook: 10 min

Ingredients:

Garlic Lemon Broccoli Stems:
1 lb tender broccoli stems
2 Tbsp olive oil
6 garlic cloves, minced
1 Tbsp freshly squeezed lemon juice
1 tsp lemon zest
1/2 tsp salt
1/4 tsp pepper
1 Tbsp parmesan cheese, grated
1/2 tsp red pepper flake

Directions:
Blanch broccoli stems. In a pot of salted boiling water, cook, 2-4 minutes. Immediately plunge into an ice bath to stop the cooking. Once cooled, drain and set aside.

Heat oil in a skillet over medium high heat. Add garlic, lemon juice, zest, salt, and pepper. Stir, sauté, 3-5 minutes. Add broccoli, toss well, heat through.

Transfer to a serving dish, top with parmesan cheese and red pepper flake.
