General Tso’s Chicken
Serves: Four | Prep: 40 min | Cook: 15 min
Ingredients:
General Tso’s Chicken:
1/3 cup soy sauce
2 Tbsp hoisin sauce
1 Tbsp sesame oil
1 Tbsp rice vinegar
2 tsp fresh ginger, grated
3 garlic cloves, minced
1/2 tsp garlic powder
1/4 tsp red pepper flake
1.5 lbs chicken thighs, boneless, skinless, cut into pieces
1/2 cup plus 2 tsp cornstarch/cornflour, divided
1 cup chicken stock
1 Tbsp honey
6-8 dried whole red chilies
3 scallions, thinly sliced, lengthwise
2 tsp toasted sesame seeds
Directions:
Make the marinade by whisking soy sauce, hosin, sesame oil, rice vinegar, fresh ginger, garlic, garlic powder, and red pepper flakes together. Place chicken in a bowl, add 3 Tbsp of marinade to the chicken. Stir and let sit for 30 minutes.
Heat oil 375F/190C.
Remove chicken from marinade coat chicken with 1/2 cup cornstarch, shaking off any excess. Fry chicken pieces in batches, moving the chicken around to keep it from sticking together. Fry, 2-3 minutes, until golden brown. Drain on a paper towel lined plate.
In a bowl make a slurry by whisking 2 tsp cornstarch with 2 Tbsp of water together, set aside.
To a large skillet add remaining marinade along with stock, honey, and whole chilies. Bring to the boil. Whisk in the cornstarch mixture, whisk until thickened. Toss the fried chicken into the sauce, coat well. Serve over rice and garnish with scallions and sesame seeds.
