Ground Beef lasagna Soup

Serves: Six | Prep: 15 min | Cook: 40 min

Ingredients:

Ground Beef Lasagna Soup:
8 oz lasagna sheets, broken into pieces
1 lb ground beef
2 Tbsp olive oil
1 onion, finely chopped
1 carrot, finely chopped
2 celery stalks, finely chopped
4 garlic cloves, minced
2 tsp dried oregano
1 tsp dried parsley
1 tsp dried basil
1/2 tsp dreid thyme
1 tsp salt
1/2 tsp pepper
1/2 tsp red pepper flake
1 14oz can chopped tomatoes
2 cups tomato sauce/passata
6 cups beef stock
2 cups fresh spinach
1/2 cup ricotta cheese
1/2 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
fresh basil, chopped
fresh parsley, chopped

Directions:
Heat skillet over medium high heat. Add beef, cook, stirring occasionally, until no longer pink. Remove meat from skillet. Turn heat to medium. Add oil, onions, carrots, and celery. Cook, stirring occasionally, until, soft not browned, 10-12 minutes. Add garlic, oregano, parsley, basil, thyme, salt, pepper, and red pepper flake. Stir and cook, 1 minute. Stir in tomato paste, cook, 30 seconds. Add chopped tomatoes, passata, and stock. Bring to the boil. Add broken lasagna sheets, reduce heat slightly and cook, 12-15 minutes, until tender. Stir in spinach. Cook, 3-5 minutes, until wilted.

In a bowl mix ricotta, mozzarella, and parmesan cheese together. Spoon cheese mixture on top of soup and sprinkle with fresh herbs, and red pepper flake.
