Chicken Fig Tray Bake
Serves: Four | Prep: 15 min | Cook: 20 min
Ingredients:
Chicken Fig Tray Bake:
4 chicken breasts, boneless and skinless.
1-2 red onions, cut in wedges
6-8 fresh figs, cut in half
1/3 cup olive oil
1/4 cup balsamic vinegar
2 Tbsp honey
4 garlic cloves, minced
1 tsp fresh thyme, minced
1 tsp lemon zest
1 Tbsp freshly squeezed lemon juice
1/2 tsp salt
1/4 tsp pepper
8-10 cups fresh spinach
1/2 cup crumbled goat cheese
Directions:
Preheat oven 425F/220C. Line a baking tray with baking paper.
Cut the chicken breast in half, trying to keep the chicken pieces roughly the same size.
On the prepared tray arrange the chicken, onions, and figs.
In a bowl whisk olive oil, balsamic vinegar, honey, garlic, thyme, lemon zest, juice, salt, and pepper together. Reserve about 1/4 cup of the mixture. With the remaining mixture, drizzle over the chicken, onions, and figs.
Bake, 20-25 minutes, until the chicken is fully cooked with an internal temperature 165F/74C.
Place spinach on to a platter, top with cooked chicken, onions, and figs. Crumble on goat cheese and drizzle over the remaining dressing.
TIP ***Also makes a delicious wrap sandwich.
