Honey Glazed Carrots
Serves: Four | Prep: 10 min | Cook: 30 min
Ingredients:
Honey Glazed Carrots:
1 lb carrots, peeled and trimmed
1 Tbsp honey
2 tsp butter
1 tsp fresh thyme, minced
1/2 tsp salt
1/4 tsp pepper
coarse salt
Directions:
If using large carrots, cut into long spears.
Place carrots in a large skillet with a lid, cover with just enough cold water to cover them. Place the lid on and bring to the boil. Once boiling, take off the lid. Cook over medium heat, 25-30 minutes, until tender and all the water has evaporated. Reduce heat, add honey, butter, thyme, sal,t and pepper, stirring occasionally. Cook, 5 minutes, until coated and glazed. Sprinkle with coarse salt before serving.
