Lucky Charm Cookies

Serves: Makes Two Dozen | Prep: 10 min | Cook: 10 min

Ingredients:

Lucky Charm Cookies:
2 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup butter, room temperature
1/2 cup light brown sugar
1/2 cup sugar
1 egg
2 tsp vanilla extract
1 1/2 cups lucky charm marshmallows, divided
1 cup white chocolate chips

Directions:
Preheat oven 350F/180C. Line baking trays with baking paper.

Mix flour, baking powder, soda, and salt together.

In a mixer with a paddle attachment cream butter and sugars together, 3-5 minutes. Add eggs and vanilla, mix, scraping down the bowl as needed. Mix in dry ingredients, until combined. Stir in 1 cup marshmallows and chocolate chips. Scoop dough onto the prepared tray, 3-4-inch apart. Bake, 8-11 minutes. Once removed from the oven press in a few of the remaining marshmallow and let cool 5 minutes before placing on a wire rack to cool completely.
