Mushroom Mascarpone Toast
Serves: Four | Prep: 10 min | Cook: 15 min
Ingredients:
Mushroom Mascarpone Toast:
sliced sourdough bread
2 Tbsp olive oil
8 oz brown mushrooms, sliced
1 shallot, thinly sliced
4 garlic cloves, minced
2 tsp fresh thyme, minced
1 tsp worcestershire sauce
1/2 tsp pepper
1/4 cup white wine
1/2 cup mascarpone cheese
1/2 cup parmesan cheese, grated
2 tsp red pepper flake
1/4 cup fresh parsley, chopped
Directions:
Preheat oven 425F/220C.
Place sliced bread onto a baking tray. Bake, 4-6 minutes, until toasted.
Heat oil in a skillet over medium high heat. Add mushrooms, cook, 5-7 minutes. Add shallots, garlic, fresh thyme, worcestershire sauce, and pepper. Cook, 2-3 minutes more, until golden brown, stirring occasionally. Stir in wine. Cook, until most of the liquid evaporates. Turn off heat, stir in mascarpone and parmesan cheese. Place mushroom mixture onto the toasted bread. Garnish with red pepper flake and fresh parsley.
Tip: If sauce is too thick add a little water to thin it out.
