Orange Cranberry Granola

Ingredients:
Orange Cranberry Granola:
1 Tbsp orange zest
1 1/2 Tbsp sugar
4 cups oats
1 tsp cinnamon
1/2 tsp cardamon
1/2 tsp salt
1/2 cup coconut oil
1/4 cup maple syrup
1/4 cup honey
1 tsp vanilla extract
1 cup dried cranberries
1 cup raw pecans, rough,y chopped
Directions:
Preheat oven 350F/180C. Line a baking tray with baking paper.
In a large bowl rub orange zest and sugar together. Add oats, cinnamon, cardamon, and salt. Stir together, until all is mixed through.
In a saucepan over low heat melt coconut oil, maple syrup, honey and vanilla together. Once mixture is melted, pour over the oat mixture and stir until all oats are fully coated.
Spread granola onto the prepared baking tray. Bake, 20-30 minutes, until golden brown. Let cool, then stir in the dried cranberries and chopped pecans.
**Store in an airtight container for 2 weeks
