Pumpkin Spice Granola

Ingredients:

Pumpkin Spice Granola:
4 cups oats
2 tsp pumpkin pie spice
1/2 tsp salt
1/2 cup coconut oil
1/4 cup maple syrup
1/4 cup honey
2 tsp vanilla extract
1/2 cup dried cranberries
1/2 cup roasted pumpkin seeds

Directions:
Preheat oven 350F/180C. Line a baking tray with baking paper.

In a bowl mix the oats, pumpkin pie spice and salt.

In a saucepan over low heat melt coconut oil, maple syrup, honey and vanilla together. Once mixture is melted, pour over the oat mixture and stir until all oats are fully coated.

Spread granola onto the prepared baking tray. Bake, 20-30 minutes, until golden brown. Let cool, then stir in the dried cranberries and roasted pumpkin seeds.

Store in an airtight container for 2 weeks
