Roasted Garlic Hummus

Serves: Ten | Prep: 10 min | Cook: 30 min

Ingredients:

Roasted Garlic Hummus:
1 head of garlic
2 cans chickpeas, drained and rinsed
1/4 cup freshly squeezed lemon juice
1/4 cup tahini
1/2 tsp salt
1/4 tsp cumin
1/4 tsp pepper
1/4 - 1/2 cup extra virgin olive oil

Directions:
Preheat oven 400F/200C.

Peel and discard any papery outer layers from the whole head of garlic. Cut 1/4- 1/2 inch from the top of the bulb. Place the bulb into a piece of foil or an ovenproof dish with a lid. Drizzle with olive oil. Wrap in foil or place lid on top. Roast, 30-40minutes, until tender. Let cool slightly before handling.

In a food processor fitted with a steal blade add chickpeas, lemon juice, tahini, salt, cumin, pepper, and squeeze out the roasted garlic, leaving two to three bulbs for garnish. Pulse for 30 seconds. With the food processor running, slowly add olive oil, starting with a 1/4 cup and adding more to get the desired consistency Blend, about 3 minutes, until smooth. Taste for seasoning. Transfer to a bowl.

In another bowl mash the remaining 2-3 cloves with a fork. Place into the center of the hummus and drizzle with extra virgin olive oil and a sprinkle of paprika.

Serve with Homemade Pita Chips.
