Salmon Fried Rice
Serves: Four | Prep: 10 min | Cook: 15 min
Ingredients:
Salmon Fried Rice:
1 lb salmon fillet
3 Tbsp soy sauce, divided
1 Tbsp honey
1 Tbsp sesame oil
2 Tbsp vegetable oil
5 scallions, finely sliced lengthwise
3 garlic cloves, minced
1 chili, minced
4 cups cooked brown rice
1/2 cup frozen peas, defrosted
1 cup broccoli florets, finely chopped
2 eggs, beaten
1 Tbsp sweet chili sauce

Directions:
Preheat oven 350F/180C. Line a baking tray with baking paper.
Place salmon skin side down onto the prepared tray. In a bowl whisk together 1 tablespoon soy sauce, honey and sesame oil, pour over salmon. Bake, 10-12 minutes.
Heat oil in a large skillet over medium high heat. Add scallions, chili and garlic cook for 1 minute. Add rice in an even layer, cook without stirring 2-3 minutes, until the bottom becomes slightly crisp. Add the peas and broccoli, stirring occasionally, cook, 2-3 minutes. Push the rice to one side of the skillet and add the beaten eggs to the other, cook, constantly stirring 30-60 seconds, until the egg is fully cooked. Add the remaining 2 tablespoons of soy sauce and sweet chili sauce. Stir together.
Once the salmon is cooked, flake with a fork and gently fold into the rice along with any drippings from the tray. Top with siracha, scallions and chilies.
