Sheet Pan Sweet Potato Nachos
Serves: Four | Prep: 15 min | Cook: 35 min
Ingredients:
Sheet Pan Sweet Potato Nachos:
2.5 lbs sweet potatoes, cut into wedges
4 Tbsp olive oil, divided
1 tsp salt
1/2 tsp pepper
3/4 tsp chili powder, divided
1 lb ground beef
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp curry powder
3 Tbsp sweet chili sauce
2 Tbsp soy sauce
1/2 can (7 oz) black beans, rinsed and drained
1 cup cheddar cheese, shredded
3 scallions, sliced
1 red chili, sliced
1/4 cup fresh cilantro, chopped
Toppings:
Pico De Gallo
Guacamole
Garlic Mayonnaise
Directions:
Drizzle 1 Tablespoon of oil onto a baking tray and place in the oven while preheating 400F/200C.
In a bowl add potatoes, 2 Tablespoon oil, 1 tsp salt, 1/2 tsp pepper and 1/4 tsp chili powder. Mix well. Carefully place potatoes onto the preheated tray, spread out evenly, trying not to overcrowd or overlap. Bake, 15-20 minutes, flip and bake for another, 15-20 minutes, until golden and crispy.
Meanwhile, in a skillet, heat the remaing 1 Tablespoon oil. Add beef, 1/2 tsp chili powder, garlic powder, onion powder, and curry powder. Cook, 4-5 minutes, until browned. Add sweet chili, soy sauce, and drained beans to the skillet. Stir and bring to the boil. Remove from heat.
Once potatoes are done, top with beef mixture and cheese. Place back into the oven, 3-5 minutes more, until the cheese melts. Garnish with scallions, chilis and cilantro. Serve with Guacamole, Pico De Gallo, and garlic mayonnaise.
