Strawberry Crunch Ice Cream Bars

Ingredients:
Strawberry crunch Ice Cream Bars:
12 oz fresh strawberries, roughly chopped
1 Tbsp honey
2 cups heavy/double cream
1 can condensed milk
1 tsp vanilla paste
3/4 cup freeze-dried strawberries
2 cups puffed rice crispies
Directions:
Place fresh strawberries and honey into a blender, blend until smooth.
In a bowl add cream, with a hand mixer, mix until soft peaks form, 4-5 minutes. Add condensed milk and vanilla, whisk 1-2 minutes more. Add strawberry puree and whisk just until combined. Divide mixture between popsicle molds. Freeze for at least six hours, overnight works best.
In a bowl add freeze dried strawberries and rice crisps. Break pieces up with hands. Place mixture onto a flat plate and roll bars into the mixture. Serve immediately or place onto a paper lined baking sheet and place back into the freezer, until ready to be eaten.
