Sugared Cranberries

Serves: Two Cups | Prep: 2.5 hrs | Cook: 5 min

Ingredients:

Sugared Cranberries:
1 1/4 cups sugar, divided
1/4 cup water
2 cups fresh cranberries

Directions:
Place a wire rack on top of a baking tray lined with baking paper.

Rinse cranberries, removing any soft cranberries.

In a medium saucepan add ¼ cup sugar with ¼ cup water. Simmer on medium low heat, until the sugar dissolves, stirring occasionally. Add cranberries and stir, making sure to coat all the berries. Using a slotted spoon remove the berries from the liquid to the prepared wire rack. Let sit for at least one hour.

To a baking tray add the remaining 1 cup sugar, roll the berries in batches in the sugar, until all the berries are completely coated. Let sit for another hour before using.
