Turkey Korma Meatballs

Serves: Four | Prep: 20 min | Cook: 25 min

Ingredients:

Meatballs:
1 lb ground turkey
1 zucchini, shredded
2 cloves garlic, minced
2 tsp fresh ginger, minced
3 scallions, thinly sliced
2 Tbsp fresh cilantro/cpriander, finely chopped
1 tsp garam masala
1/2 tsp curry powder
1/4 tsp nutmeg
1/3 cup plain breadcrumbs
1 egg

Korma:
2 Tbsp olive oil
1 onion, chopped
2 garlic cloves, minced
1 Tbsp fresh ginger, grated
2 tsp garam masala
1 tsp turmeric
1/2 tsp salt
1/4 tsp pepper
1 can coconut milk
3 Tbsp ground almonds
3 Tbsp fresh cilantro/coriander, chopped

Garnish:
fresh cilantro, scallions, sliced almonds, pomegranate seeds


Directions:

Meatballs:
Preheat oven 350F/180C. Line a baking tray with baking paper.

In a bowl add all the meatball ingredients. Mix well. With your hands roll into 12 equally sized meatballs. Place onto the prepared tray. Bake 20-25 minutes, until cooked through.

Korma:
Heat oil n a skillet over medium hea. Add onions, cook until soft, 3-5 minutes. Add garlic, ginger, garam masala, turmeric, salt and pepper. Stir and cook, 1-2 minutes. Add coconut milk, bring to the boil, reduce heat, gently simmer, 10-12 minutes. Add the ground almonds, cilantro and cooked meatballs to the skillet, cook 1-2 minutes more, until warmed through.

Serve over rice and garnish.
