Turkey Vegetable Bolognese

Serves: Four | Prep: 15 min | Cook: 40 min

Ingredients:

Turkey Vegetable Bolognese:
1 1/2 lbs ground turkey
1 onion, finely chopped
1/2 red bell pepper, finely chopped
2 carrots, finely chopped
1 celery stalk, finely chopped
1/2 tsp salt
1/2 tsp pepper
4 garlic cloves, minced
1 zucchini, shredded
2 Tbsp tomato paste
1/2 cup white wine
2 cups tomato sauce
1 14 oz can chopped tomatoes
1 rosemary sprig
5 thyme sprigs
1 bay leaf
1 parmesan rind
1/2 cup heavy/double cream
1/2 cup parmesan cheese, grated
red pepper flake
8 oz spaghetti

Directions:
In a large pot heat oil over medium heat. Add onions, bell pepper, carrots, celery, salt, and pepper. Cook, 15-20 minutes, stirring occasionally, until soft. Add turkey, cook 2-3 minutes, until browned. Stir in garlic, zucchini, and tomato paste, cook 2-3 minutes. Add wine, cook 2-3 minutes, until almost evaporated. Add tomato sauce, chopped tomatoes, rosemary, thyme, bay leaf, and parmesan rind. Stir, bring to the boil. Lower heat, partially cover and simmer, 15-20 minutes, until sauce thickens.

Meanwhile, cook pasta in salted boiling water as per directions on the box. Remove herb stems and parmesan rind. Stir in cream and parmesan cheese. Cook, 1-2 minutes. Add drained pasta and toss to coat. Serve with more parmesan and red pepper flake.
