Wedge Salad with Creamy Blue Cheese Dressing

Serves: Four | Prep: 10 min | Cook: 8 min

Ingredients:

Wedge Salad:
1 head iceburg lettuce
red onion, thinly sliced
cherry tomatoes, halved
6-8 slices bacon

Creamy Blue Cheese Dressing:
1/3 cup blue cheese
1/4 cup mayonnaise
1/4 cup sour cream
1 tbsp freshly squeezed lemon juice
1/2 Tbsp fresh parsley, finely chopped
2 Tbsp buttermilk
salt
pepper

Directions:
Preheat oven 425/220C. Line a baking tray with baking paper.
Lay bacon flat on the prepared tray. Cook, 8-10 minutes, until crispy. Roughly chop.
Cut a head of iceburg lettuce into four quarters.
In a bowl add blue cheese and lightly mash with a fork. Add mayonnaise, sour cream, lemon juice, and parsley. Stir together. Season with salt and pepper. Add buttermilk, a little at a time, until the desired consistency is reached.
Place on quarted of the lettuce onto each plate. Top with dressing, red onion, cherry tomatoes and bacon.
